Enchiladas

Enchiladas
makes 5 servings

1 Pound Ground Beef
1 Package Taco or Burrito Seasoning
(1) 16 oz. Can Refried Beans
1 Can Campbell's Condensed Cheddar Cheese Soup
1 Medium Onion, Chopped (About 1/2 Cup)
(5) 10-inch Flour Tortillas
1 Can Enchilada Sauce
Cheddar Cheese


Heat oven to 350 degrees. Cook beef in a skillet over medium-high heat. Stir in seasoning, beans, soup, and onion. Divide meat mixture among tortillas. Roll up the tortillas and place seam side down in a 3 quart greased baking dish. Pour the enchilada sauce over the tortillas and sprinkle on cheese. Bake for 20 minutes until the enchiladas are hot and bubbly.

The original recipe suggests adding rice to the enchiladas, but my husband said that that would be way too many carbs for him. So if you're carb conscious, omit the rice or serve it on the side.
